Almonds can help control blood sugar and insulin levels after eating. The magnesium in almond butter can also help increase insulin sensitivity. This could help lower your risk of developing diabetes. Give the almonds longer in the food processor so the heavy powder begins clumping on you. Don’t worry! If it isn’t moving much inside the food processor, turn it off, open the lid, scrape down the sides, and break up any large clumps. You may need to do this a few times. You can add a pinch of salt to your almond butter for more flavor. You can also add sugar, honey, or maple syrup for sweetness. Spices—such as vanilla, cinnamon, or nutmeg—can also be added for additional flavor. Homemade almond butter can be stored for up to three weeks in the refrigerator. Made from crushing and grinding freshly roasted almonds into a paste, almond butter is a spreadable food which is perfect for spreading on toast or adding to biscuit recipes.
